white chili

last week, matt and i went to my BFF heathers house and had dinner and christmas with her and her family. i know, it was the middle of january, but we always do christmas together in january. between all our busy work schedules and matt and i usually traveling at some point, december is just way to busy....so january works for us!


anyway, she made white chili and corn bread for dinner. i had never had white chili, but always wanted to try it!


it was sooo yummy (even if BFF somehow made the chicken and cheese all lump together).....so i decided to make some too.


i googled recipes (i google E.V.E.R.Y.T.H.I.N.G) for white chili in the CROCK POT (because im all about the crock pot) and found a ton.


then i narrowed it down to the recipes that didnt require me to cook the chicken first...i am all about coming home in the morning from work, throwing all ingredients in (frozen chicken and all!) and going to bed...then getting up at 4 or 5PM and


whaa-la! dinner is ready!


i found two that i thought sounded good...and combined them.
it TURNED.OUT.SO.GOOD


the chicken shredded up so easily! heres my FIRST bowl, add your dollop of sour cream and shredded cheese on top....oh, and dont forget the cornbread! i made that too, for the first time ever in my life (along with the white chili, a night of firsts!)

PS, for those of you who will ask for the recipe....

  • 1 1/4 lbs boneless skinless chicken (i used 4 frozen chicken breasts)
  • 2 (15 oz) cans of great northern beans or navy beans (i used one of each)
  • 1 (15oz) can hominy or white corn (i have no idea what hominy is, so i used white corn)
  • 1 envelope taco seasoning (i didnt use this, instead i used 2tsp cumin and 1/2 tsp oregano that was used in another recipe)
  • 1 (4 1/2 oz) can of chopped green chilies
  • 1 can condensed cream of chicken soup
  • 1 (14 oz) can of chicken broth
  • chopped green onion, optional (i opted out)
  • sour cream and SHREDDED monterey jack cheese for garnish (i used monterey jack and colby)

place chicken in crock pot, then the beans and corn (i drained both first).

next, in a medium bowl, combine taco seasoning (or what ever seasonings you are using), chilies, condensed soup, and chicken broth. then pour over top of ingredients in crock pot.

cover and cook on low for 8-10 hours.

before serving, be sure to break up (shred) the chicken.

serve topped with green onions, sour cream, and cheese!

dont forget the corn bread!
