yummy green beans

we have a vegetable with dinner every night....nothing fancy....green beans or corn from a can. then i received the large (and small) micro cooker by pampered chef as a wedding gift...this thing is GREAT!

i steam broccoli all the time...just throw a frozen bag of broccoli (or any vegetable for that matter) in, microwave it for about 5 minutes....and whala! steamed broccoli!
then i ran across this recipe for fresh green beans...and just have to share@ they turn out soooo yummmmy! and a change from the ole' green beans from a can!

1 lb fresh green beans
1 cup chopped onion (i just used one med. onion)
2 cloves garlic
1/2 cup chopped red bell pepper (i just used one red bell pepper)
2 T bacon grease (or substitute 1 T butter and 1 T olive oil)
1 cup chicken broth
1/2 to 1 t kosher salt (or regular table salt, 1/4 to 1/2 t)
ground black pepper

`cut the stem ends off the green beans.
`melt bacon grease in skillet over med-low heat
`add garlic and onions and cook for a minute
`add green beans and cook for about a minute, until beans turn bright green
`add the chicken broth, red pepper, salt, and black pepper
`turn heat down to low and cover with a lid, leaving lid cracked to allow steam to escape
`cook for 20-30 minutes or until liquid evaporates and beans are fairly soft, yet still a bit crisp. you can add more chicken broth during the cooking process, but dont be afraid to let it all cook away so the onions and peppers can caramelize.
