i didnt think i was a fan of meatloaf....i remembered it being bland, tasteless, and just kind of a pile of mush that needed a lot of ketchup to make it tolerable! now thats nothing against my moms meatloaf...i honestly dont ever remember her ever making meatloaf!

i had to improvise when it called for some ingredients, and with my mom on the phone for support,....the meatloaf came to shape! and into the oven it went...
pray it turns out at least edible!

matt was at work, he comes home, and i proudly tell him that i made meatloaf, for the first time ever, for him! and he says..."im not sure if i like meatloaf anymore".

in case you would like to try it, if you dont already have a superb meatloaf recipe like me....here you go.
super "easy" meatloaf
~1 lb ground meat
~1 pkg. onion soup mix
~1/2 c. ketchup
~3 slices bread, broken up ( i used 1 cup cubed herb seasoned stuffing because thats what i had....here starts the improvising that my mom helped me with!)
~1/2 c. cheddar cheese
~1/2 tsp. garlic
~1 egg
~1/4 c. milk
~1 (8 oz) can tomato sauce (i used about 1/2 jar of robusto ragu spaghetti sauce, sauteed onion and mushroom...because thats what i had!)
~mushrooms (optional) i didnt have any, so no mushrooms (this time) for us
preheat oven to 375 degrees. mix first 8 ingredients (can add about 5 shakes of pepper, if desired). form into a shape, place on a greased baking dish and bake for 45 minutes. then add tomato sauce on top of meat loaf. now turn oven down to 325 degrees, and bake 45 minutes longer.
you may need to add a little water to baking dish, if needed (i didnt need to)

I'm going to have to attempt this one. Bran (like Matt) isn't a fan, but he's usually a good sport with my 'attempts' on cooking new dishes.. Let's see if I can follow these instructions.. MLOL
