lots of stuff

when i was in florida visiting my family, i came across this fantastic sounding reciepe and decided to surprise everyone with dinner. it was a HIT! everyone enjoyed it!
i made it last week for hunky husband and i....
OH.MY.GOODNESS.! must stop eating!


Chicken Cordon Bleu Casserole

6 boneless/skinless chicken breast (cut up (raw) into bite size pieces)
1 1/2 cup swiss cheese (grated)
1 1/2 cups ham (chopped)
1 can reduced fat cream of chicken soup
1 pint low-fat sour cream
1 pkg. stove top stuffing (chicken (or any)flavor; prepared as directed but omitting butter)


Place raw chicken on the bottom of 9x13 pan. Top with grated cheese & chopped ham. Mix together soup and sour cream & pour over the top of the cheese & ham. Sprinkle prepared stuffing on top. Bake at 375 for 50-60 mins.

let me explain the TWO casserole dishes...my 9/13 pan is in that little drawer below the stove...i was prepping everything for dinner and went to open that pesky little drawer and it would not open. i fought with it for a half an hour! sitting on the ground, with my feet on the cabinets on either side of the stove, pulling so hard, that i moved the stove! there is a part of my pizza stone (the wire rack handle holder thingy) that is sitting to far up and getting stuck on the lip of the oven....so, after struggling for half an hour and about ready to just SCREAM....i got my two casserole dishes out (that are stored in a cabinet)...and proceeded with dinner......

last weekend, matt and i had a fun weekend out. friday night we met our good friends, doug and stephanie, at a sports bar to watch the blues play off game...the blues lost...but there was a great time had by all!

then on saturday night, we met another couple, doug and brandi, at the bowling alley and played scotch doubles! doug, brandi, and matt are all FANTASTIC bowlers..they all have their own shoes, their own balls, their own towels, their own bags to carry their balls...and all bowl in leagues and have their entire lives!...
then there is me! i think i have bowled 5 games...MY ENTIRE LIFE!
we had a blast! and i actually was bowling good! in scotch doubles, you take turns bowling with your partner. you bowl one ball, and then your partner bowls. last time matt and i bowled scotch doubles, our high game was 111....which is horrible! my ball kept finding the gutters!
this time...WE ROCKED! our high game was 268! and our total for the 3 games was 653!!!
there are all sorts of prizes your can win while bowling. i won a free game because i had a colored pin in the #1 spot when i bowled and i got a strike! matt also won a free game this way. they also give prizes for the first place team...and draw for the second and third place teams....they drew us for second place! so we won 21$!!!! woo hoo!
i didnt get any pictures....but we all sure had a fun time and lots of laughs!
after bowling, we went to dennys....what a great way to end a fun filled night!
